Here at Escape, we believe breakfast is the most important meal of the day–especially if you’ve got mountains to climb and waves to surf. Our campervans come fully-equipped with a camp stove and propane, a sink with running water, a solar-powered refrigerator, and all the plates, bowls, cutlery, and utensils you need to whip up gourmet meals on the road. Here are our top 8 breakfast recipes to start your day off on the right foot.

Campervan Cooking Breakfast Recipes

Sausage Breakfast Skillet

Breakfast sausages

1 bag frozen potatoes (or finely diced regular potatoes)

2 zucchinis

1 red pepper

1 onion, chopped

Salt/pepper to taste

  1. Cut and cook up the sausages.
  2. Add the vegetables and seasonings.
  3. Feel free to throw in anything else you like–bacon, mushrooms, kale… you name it! (Try a fried egg on top for extra protein)

Breakfast Sandwiches

English muffins

Eggs, scrambled (or fried)

Bacon or ham

Cheddar cheese, grated

  1. For those who choose bacon, cook bacon first, pour out most of the oil (keeping some) and scramble the eggs in the leftover bacon juice (mmmm you can just hear it can’t ya?).
  2. Scramble the eggs, then put together your sandwich.
  3. Eat it cold, or warm it up in a pan on the stove with the lid until the cheese is melted (our favorite).
  4. Add any other desired toppings, such as tomatoes, avocado, and hot sauce.

DIY Instant Oatmeal

Water

Instant oats

Optional add-ons:

Seeds or chopped nuts

1 tbsp nut/seed butter of your choice

Dried or fresh fruit

Sweetener, such as brown sugar or stevia

Pinch of salt

  1. Cook recommended amount of oats and water on the stove.
  2. Add dried fruit, nuts, seeds, and sugar, etc., and serve!

Huevos Rancheros

8 ounces thick-cut bacon

1/2 white onion, chopped

1/2 green bell pepper, diced

1 jalapeño chile, halved and thinly sliced

1 medium tomato, chopped

1 can (8 oz.) tomato sauce

8 large eggs

Warm tortillas and refried beans

  1. Heat a large frying pan over medium-high heat. Add bacon and cook, turning often, until almost crisp, about 10 minutes. Transfer bacon to paper towels.
  2. Drain most of fat from pan. Add onion, pepper, and chile to pan and cook until starting to soften, about 2 minutes. Stir in tomato, tomato sauce, and 1/2 cup water. Bring to a simmer. Set aside.
  3. Fry the eggs in the same pan. Set tortillas on each plate and top with 2 eggs. Spoon sauce over eggs and crumble bacon on top. Serve with refried beans.

Breakfast Burritos

6 eggs

¼ cup sour cream

8 oz cheese (any kind works)

½ – 1 lb. sausage

1 bag frozen potatoes (or finely diced regular potatoes)

Peppers

Onions

Tortillas

Salt/pepper to taste

  1. Heat a large skillet and cook sausage. Set aside.
  2. Cook potatoes. Set aside.
  3. Crack all of your eggs into a giant bowl.
  4. Whisk in the sour cream.
  5. Scramble eggs.
  6. Combine all ingredients together and mix (reheat if things have gotten cold).
  7. Roll your burritos.

Crepes

1 cup flour

1 cup milk

1 cup water

2 eggs

3 tbsp olive oil

Pinch of salt

  1. Mix everything in a bowl.
  2. Heat a pan over medium heat. When it’s hot, start pouring in just enough batter to coat the bottom of the pan.
  3. Fry on each side, but let it fry well on one side before you flip it so that you don’t tear the crepe. It should disconnect from a frying pan by itself. The first crepe is always a tricky one, so if you spoil it, don’t worry.
  4. Serve with yogurt, fresh fruits and nuts. Makes enough for two people.

French Toast

Bread slices

1-2 Eggs (depending on how many slices of bread you plan on using)

Cinnamon

Powdered sugar

Maple syrup

  1. Mix egg and cinnamon in a bowl and cover bread with mixture.
  2. Place bread in skillet on the stove and fry until golden brown.
  3. Top with powdered sugar and maple syrup.

Pancakes

Water

Pancake mix

Bananas / Chocolate Chips / Blueberries

Maple Syrup

Butter

  1. Mix recommended amounts of water and pancake mix according to the instructions on the bag–we like Birch Benders. Add in bananas/chocolate chips/berries if desired.
  2. Heat a lightly oiled pan over medium-high heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake.
  3. Cook pancakes, flipping once golden brown.
  4. Spread on butter, drizzle with syrup, and serve.
